I just thought I would share one of my all time favorite recipes. It has passed the test again and again! It is the number one request from the guys that work with Kirk (and believe me over the 12 years he's worked there, they have tried plenty of my goodies!!) and my kids LOVE them too. I found the recipe years ago in a little magazine called Everyday Food published by Martha Stewart. I searched the site and cannot find this exact recipe, so here it is!!
1 stick unsalted butter melted
1 cup packed brown sugar
2 eggs
1 tsp pure vanilla extract
1/4 tsp salt
1 1/2 cups flour
1 cup toffee bits. (the only store I can find these at is Walmart. It's a Heath brand and it is the plain toffee bits without chocolate)
Preheat oven to 350. Grease 8x8 pan. In a bowl cream the butter and sugar until smooth. Add eggs, vanilla and salt. Beat well. With mixer on low speed add flour slowly. Stir in toffee bits by hand. Spread batter in greased pan and bake until golden brown about 30-35 minutes. Cut into squares. Can be stored in container for up to 5 days (but I know they won't last that long because they are that good!!) Goes awesome with a cool glass of milk.
The batter before it's cooked (it's really thick) I double the recipe, so this is a bigger pan.
