My experimenting has made many happy tummies around here! I am very pleased with a New York cheesecake recipe I tried. It came out flawless with no cracks and is the creamiest cheesecake I've ever tasted! It is the recipe from Juniors in New York. It is a keeper. I also tried the recipe for the "little fellas" they sell, and they weren't my favorite, but my boys ate them up like crazy! (they are made in cupcake pans) I've given away lots of cheesecakes too. I am having too much fun, but I ran out of ingredients. Got to make a store run. They have a recipe for a strawberry shortcake cheesecake which I know my friend Debbie would love. It's layered with cake, cheesecake, strawberry cream and cake again. YUMMY!!! I want to make it, but how can I get it to you Deb!!! Maybe I could just send you a picture.
Anyway, I am doing really good cutting out all of the sugar and "bad things" from my diet and eating LOTS of veggies to fill the cravings. I am happy to report I have lost 6 pounds in two weeks! I hope to keep losing and exercising. (I walked/ran today and got in 2.7 miles!) It feels great. I have a long way to go, but am happy at the results so far.
A final note: could you keep my friend Tiffany and her family in your thoughts and prayers this week? Her father passed away on Thursday and his funeral is tomorrow. Kirk and I are going. If you have time, read what she wrote on her blog. Very sweet. Anyway, I better go. Beth

Pictures?!?! I'll fly up to eat it!!! Just the description makes me salivate. I'm trying to plan a trip to Boise in the upcoming months before I start getting too big to travel. We'll see if that evolves. Young Women's is taking all my weeks and weekends up. I wish I could be there to sample all your lovely cheesecakes. Send me any recipes you find that are winners and I can add them to my recipe collection.
