Here is the caramel apple recipe for you to try....they are a bit tricky, but amazing! This recipe is from my friend Adrianne, who learned it from her friend Allison (who worked in a candy store and this is the one they used). You won't regret it! (well, you may after you can't stop eating them...)
4 sticks of butter (use real butter girls!)
4 1/2 cups brown sugar packed (I ALWAYS use C&H brown sugar which is thicker than the cheep stuff)
2 cups Karo syrup
2 tsp real vanilla
2 cans sweetened condensed milk
First prep your apples. Pick only nice, firm fruit. You can use granny smith, fuji, gala etc. whatever your preference (I like fuji) pick about 30 smaller apples, or 25 medium apples.
Scrub apples really well and dry. Press in sticks (I used larger craft sticks, but small works too) place apples on greased foil. (warning, use greased foil only, I made the mistake of using waxed paper and it was a disaster!)
After your apples are ready melt butter in pot over medium heat. Add brown sugar and bring to boil. Add syrup and bring to boil. Slowly add vanilla and milk while stirring. Bring to 240 degrees stirring constantly. Don't use too high of heat or it will scorch. Dip apples in caramel and set on foil to cool.
Once your apples are cooled form the extra caramel around the bottom of the apple. (I found this a great way to make a sort of "base" for the apple to sit up straight!) Then you can dip them in melted chocolate (white or milk) and roll in toppings like cinnamon sugar, cut up candy bars, crushed oreos, toffee bits (my favorite!!), nuts or whatever you can think of! Just let the chocolate set for a few minutes before you put the toppings on or they will just slide off.

I made your caramel apple recipe last night. I did half the recipe and use bamboo skewers but it still worked perfectly. I dipped a few in chocolate but I really like them with just caramel. Thank you for sharing your recipe. I've been looking for a recipe that didn't start with: buy and unwrap numerous store bought caramels. They are so good.
